Mary Had a Little Lamb Stew

Ingredients:
3 tbsp extra virgin olive oil
1 tsp course sea salt
1 tsp crushed black pepper
1 lb lamb stew meat
1 yellow onion chopped
**8 Campari tomatoes
1 ½ tbsp beef bouillon
1 cup Malbec
1 tsp fresh thyme
Directions:
In a large pot over medium heat add extra virgin olive oil. Season the lamb meat with salt and pepper and brown in the pot (8-10 minutes). Once the lamb meat has lightly browned add one chopped yellow onion and cook until the onions are transparent (2-3 minutes).
Cube the tomatoes and add them to the pot stirring until they have cooked down (2-3 minutes). Add the bullion and wine and stir. Add the fresh thyme and cover the pot. Lower the heat to low and allow to simmer for 45 minutes to an hour. Check the pot occasionally and stir.
If you notice a reduction of liquid while simmering add one more cup of wine.
**substitute Campari tomatoes for 6 Roma tomatoes or one 14 oz. can of tomatoes
