Honey Roasted Acorn Squash

Ingredients:
1 Acorn squash
1 stick unsalted butter (1/2 cup)
1/4 cup honey
1/2 tsp smoked cayenne pepper
Directions:
Preheat oven to 400 degrees Fahrenheit
Slice one acorn squash into 1 1/2 inch slices removing the pit and seeds. Lay slices flat over non-stick baking sheet with added layer of non-stick foil or a cookie baking sheet.
In a small sauce pan over medium-low heat melt one stick of unsalted butter. Once butter is melted add honey and smoked cayenne pepper. Mix together and coat over slices of acorn squash. Lay squash on flat sides and bake for 15 minutes.
Carefully flip the acorn squashes to the other side and use a heat-resistant utensil to coat the other sides. Bake for another 15 minutes.
Remove from the oven and allow to cool for at least 5 minutes before serving.
