Collard Greens with Smoked Turkey Legs

Ingredients
1 pkg smoked turkey wings or drumsticks
1/2 gallon water
1 large onion chopped
4 cloves of garlic chopped
1/2 bay leaf
1/2 tbsp salt
1 tbsp pepper
1 tbsp Knorr chicken flavor boullion
4 lbs fresh collard greens
1 lb mustard greens
Directions
In a large pot bring to a boil 1 half gallon of water and add the smoked turkey wings/drumsticks. Chop the onion and and garlic and add it to the smoked turkey along with the bay leaf, salt, pepper, and chicken bouillon. Lower the heat to medium low and cover the pot allowing it to slow cook for at least two hours.
Rinse the collard and mustard greens well and cut into one inch wide strips. Add the chopped greens to the simmering turkey wings. If water has evaporated from the turkey wings add more. Lower the heat to low and cover allowing to slow cook for at least two hours. Stir occasionally making sure the water level is maintained and greens are cooking evenly.
